I think these waffles truly embody my approach to health. They're a bit of me in the aspect that: I'm always looking to include micronutrients in my meal, sometimes in creative ways. But, I also rely on some foods that are not healthy foods, or maybe a better way to put it is: the foods don't exactly support my health, but they aren't inherently terrible for me.
I make this little bit of a disclaimer or justification to add context. I view health as an overall picture; it's about themes and habits, not about making every decision hinging on if it aligns with improving your health.
The parts of what we can control of our health outcomes should be wise choices--to me, it makes sense that if you're in a space of well-being, you choose more foods that are nutrient-dense, minimally processed, and you have some kind of connection to it. I'm not a stickler about all of the different parts of mindful eating, but I do think it's important to have some connection to your food. So, if that means that "healthy balance" for you is choosing foods that are nutrient-dense, that you cooked at home, but chose to eat in a distracting way (ie. watching your favorite tv show, scrolling on your phone....) well, then that sounds like a healthy balance to me. Or maybe you chose the inverse--less nutrient-dense food that you picked up on your way home from work, but you'll eat mindfully--paying attention to your fullness cues.
That, to me, is balance and wisdom. I believe those two things are the foundation of any long-term healthy living strategy.
So, back to the waffles. Can you believe these gorgeous babies are made with protein powder?! They're gluten-free, dairy-free, and peanut free. Not Vegan, as there are egg whites and jello mix in the ingredients. I love making these waffles for any meal--breakfast for dinner is one of my favorites. Here is what you need:
Makes 1 large waffle, or 4 mini waffles
Cook time: 20 min Prep time: 5 min
Ingredients:
Waffles:
-27g plant-based protein powder (I like Blessed and Planta)
-6g cocoa powder (I like Rodelle)
-1/4 tsp salt
-1/4 tsp baking powder
-117g canned pumpkin
-55g liquid egg whites
-40g unsweetened cashew milk
Pistachio cream:
-136g unsweetened vanilla cashew yogurt
- 4g pistachio sugar-free pudding mix
- 5g roasted cacao nibs
Method:
Plug in your waffle iron of choice. Heat to the medium setting while mixing the batter.
Before preparing the waffle batter, prepare the pistachio cream by adding cashew yogurt and jello mix to a small bowl. Whisk until well combined, and set aside.
In a separate bowl, combine protein powder, cocoa powder, salt, and baking powder. Whisk until combined. Add canned pumpkin, egg white, and cashew milk. Whisk until well-combined.
Stir cashew yogurt and jello mixture, to alter consistency, add a splash of cashew milk until desired consistency is reached.
Spray the waffle maker with non-stick spray. If using a regular-sized waffle maker, add batter to the middle of the iron and spread slightly with a back of a spoon. Press down the lid and allow it to cook. If using a mini-waffle maker, add 1/4th of the batter to the iron, and allow to cook. Once waffle(s) are cooked, remove from iron and plate. Add pistachio cream to top the waffles and garnish with roasted cocoa nibs.
